I would serve this simple, healthy side dish to anyone who loves mashed potatoes, loves cauliflower or…. hates cauliflower. I think that covers, oh I don’t know,¬†everyone. I wouldn’t even tell the cauliflower haters what’s in it until they give it a taste and tell me how good it is.

Garlic Parmesan Mashed Cauliflower with Chives

– 1 head of cauliflower
– 3 garlic cloves
– 1/4 cup shredded parmesan cheese (not the dried grated kind in a can)mashed.cauliflower
– 1 tablespoon organic butter or Brummel and Brown buttery yogurt spread
– 1/4 cup chives

1. Chop cauliflower and garlic and steam in a large pot until soft and can be mashed with a wooden spoon (about 20 minutes).

2. Transfer to a medium mixing bowl and add parmesan and butter spread. Beat on low to medium speed until smooth. Add chives and mix with a spoon.
