It’s the holiday season, and you’ll never know when guests are going to pop in unexpectedly. Keep these ingredients on hand to whip up an awesome healthy dip in about 8 minutes flat. Also great for football Sundays!

Black Bean Salsa in a Snap

1 can black beans (rinsed and drained)
2 scallions (diced)
1 garlic clove (minced)
1 small lime
1 small tomato (diced)
handful of shredded cheese (cheddar, monterey jack, or any mexican blend works well)

Place beans, scallions, and garlic clove in medium sized bowl. Squeeze lime juice into bowl. Mash beans with a potato masher until semi-smooth. Add the diced tomato and shredded cheese and stir. Microwave for 2 minutes or until warm.

Serve with mini carrots and whole grain tortilla chips. For different variations, use white northern beans instead of black beans, or add half a can of corn along with the diced tomato. For a festive look, add a few slices of avocado.
