Oh it’s good to be home! As you may know, I spent the last 3 months working in New York as a dietitian and fitness coach at Shane Diet Resort (SDR for short) for their summer season.  At SDR, I was working AND living in the resort, which means all of my meals were planned for me and served to me, on a 4 week continuous cycle. This situation had its perks of course–spinacheggsflorentin no dishes, no shopping, no cost, no prep work and always a healthy meal to greet me at the table, but for someone like me who loves to create meals and test new recipes, I craved getting back in the kitchen and whipping up something scrumptious, which is exactly what I did yesterday morning.

I’m excited to share with all of you my first meal back in my home kitchen! I was definitely in a brunchy mood– wanting something savory AND sweet, so I got to work creating a healthy waffle while Will showed me his new specialty… a healthier than benedict-style smoked salmon and poached egg over a whole grain english muffin with sauteed spinach. YUM!

Sweet Potato Cinnamon Waffles

Makes 4 wafflesHigh in protein and super filling-- great for a weekend brunch.

 

1. Poke holes in sweet potato and microwave until soft. Remove skin and place in large bowl. Whip with fork until potato becomes a puree consistency. Mix in agave nectar, vanilla and eggs.

2. In a separate bowl, combine dry ingredients (flour, salt, baking soda and cinnamon). Mix in your wet ingredients.

3. Pour 1/2 to 3/4 cup of the mixture into a waffle iron (depending on the iron size) and cook for about 3 minutes, making sure to spray nonstick cooking spray onto the iron before and between each waffle.

I topped our waffles with blueberry Greek yogurt and cinnamon. They were very filling and sweet enough from the agave that they didn’t need any type of syrup. Making this dish made me really want to start experimenting with my waffle maker more often… maybe even for some type of savory waffles.
