Cilantro Lime Shrimp Power Bowl Recipe
Ingredients (Makes 4 bowls)
Dressing / Marinade

- ¼ cup extra‑virgin olive oil
- ¼ cup fresh parsley
- ¼ cup fresh cilantro
- 2 garlic cloves
- Juice of 2 limes
- ½ cup water
- Pinch of salt & pepper
Power Bowl Components
- 1 lb raw shrimp, thawed
- 1 (5–6 oz) bag baby spinach
- 1 (15 oz) can black beans, rinsed & drained
- ½ large red onion, thinly sliced
- 2 small ataulfo mangoes (or 1 large Tommy Atkins), diced
- ½ cup roasted pumpkin seeds (pepitas)
- 2 ripe avocados, sliced
Step‑by‑step meal prep
- Blend the dressing. Purée all dressing ingredients until smooth.
- Marinate shrimp. Pat shrimp dry, add just enough dressing to coat, and refrigerate while you chop.
- Build the bowls. Line up 4 large meal‑prep bowls or containers (I use the extra large pyrex bowls– give my salad some room!). Divide spinach, black beans, onion, mango, pumpkin seeds and avocado evenly.
- Cook shrimp. Sauté in a hot skillet 3-4 minutes per side until opaque. Divide among the 4 bowls.
- Finish & store. Drizzle remaining dressing over bowls, snap on lids and refrigerate up to 3 days.
